Welcome to Cooking with CJ! Inspiring you to get in the kitchen, or out on that grill and enjoy the feeling of making a home cooked meal!

My love of cooking, and eating, has inspired me to help teach everything I have learned over the years. I want to show every man and woman out there, that cooking is fun and easy to do! It's also like some in home therapy for me... When I'm cooking, nothing else bothers me, it's my stress relief. So please come along this journey with me as we build this channel together!

These Breakfast Pinwheels are the next breakfast treat!

CJ is taking all the best breakast meats, eggs and cheese, then rolling them up into a flaky crusty pinwheels!

What are you adding to these pinwheels?

What you’ll need:
-Pie crust.
-Scrambled eggs.
-Diced cooked bacon.
-Cooked breakfast sausage.
-Diced deli ham.
-Shredded cheddar jack cheese.
-Butter
-Maple syrup.

How to make them:
Roll out the pie crust and brush some melted butter on it.
Sprinkle the cheese around the crust.
Add the eggs and meats to the crust.
Roll up the crust and cut into 1-2 inch slices.
Place the slices into a greased muffin tin.
Mix the maple sryup with the rest of the melted butter and brush over the top of the pinwheels. 
Throw the tin into a 400F oven for 15-20 minutes, until golden brown and the crust is cooked through.
Remove from the tin, serve and enjoy!

Chicken Parmesan Sliders! Flavor overload!

Slider rolls - @kingshawaiian 
Foodi Oven - @ninjakitchen

Ingredients:
-Marinaded chicken breast.
-Italian bread crumbs and panko bread crumbs.
-Olive oil.
-Marinara sauce.
-AP flour.
-Eggs.
-Hawaiian rolls.
-Sliced Mozzarella cheese.
-Butter.
-Grated Parmesan.
-Italian Seasoning.
Prep:
-Butterfly and pound chicken breast evenly.
-Coat the chicken breast in flour, then eggs, then breadcrumbs.
-Heat olive oil on med high heat.
-Fry chicken breast until 165f internal.
-Slice package of Hawaiian rolls in half.
-Add slices of cheese on the bottom half of rolls.
-Add the fried chicken breast.
-Sprinkle Parmesan over the chicken.
-Add more sliced cheese over the chicken.
-Spoon on marinara sauce. 
-Add top half of rolls.
-Brush melted butter with garlic power and Italian seasoning mixed in, over the top of the rolls.
-Throw the sliders into a preheated over for 15 min at 350f.
-Remove from oven, slice into individual sliders and enjoy!
Southwestern egg rolls for the win! Roast your own chicken or buy a rotisserie, add a few more goodies and you’re in business!
This is a next level baked potato with this awesome, cajun shrimp alfredo topper!

Ingredients:
-Russet potatoes, cleaned.
-1/2 pound peeled and deveined shrimp.
-1 1/2 cup heavy cream.
-1/2 cup grated parmesan.
-1/2 cup shredded mozzarella cheese.
-1/2 cup diced bell peppers.
-1 tbsp minced garlic.
-Butter.
-Salt.
-Olive oil.
-Cajun seasoning.
-Hot sauce.
-Parsley.
Prep:
-Poke a few holes in the potatoes, cover in olive oil and sprinkle with salt.
-Bake the potatoes in an air fryer for 45 minutes at 400F. 
-In a pan, added oil and tab of butter, saute the bell peppers for 2-3 min.
-Dust the bell peppers with cajun seasoning.
-Add the garlic and continue to saute for 1-2 min.
-Add all of the shrimp to the pan and cook for 1-2 min, flip and cook for another 1-2 min.
-Pour the cream over the shrimp and bell peppers.
-Mix in the parmesan cheese.
-Reduce the cream sauce until thickened.
-Add the parsley.
-Cut open the potatoes, add a tab of butter and the shredded mozzarella.
-Pour over the shrimp alfredo.
-Serve and enjoy!
These quick and easy Pretzel Bites are perfect for the big game! 

CJ is showing you how to turn biscuits into an awesome game day appetizer, mini pretzel bites! 

How many of these are you putting down!


What you'll need:
-1 can flaky biscuits.
-2 cups water.
-1/4 cup baking soda.
-4 oz butter.
-Salt
-Cinnamon sugar mix.

How to make'em:
Roll out the biscuits into tube shape and cut into bite size pieces.
Boil your water and add the baking soda.
Dunk the biscuit pieces into the water for 15-20 seconds.
Place on a parchment lined cookie sheet.
Brush them down with melted butter and add salt.
Place in a 400f oven for 10-15 minutes or until browned like a pretzel.
Remove and brush them down with a little more butter.  Add cinnamon sugar mix if you like.
Serve and enjoy!

Ingredients:
-12 oz block of velveeta.
-8 oz Oaxcan cheese.
-8 oz shredded cheddar cheese.
-1 cup milk.
-2 cups diced grilled carne asada.
-1 can Rotel.
-Mexican or all purpose Seasoning.

Prep:
-Add all ingredients to 8x8 baking pan or dish.
-Add pellets to the WFG.
-Put the WFG on smoker setting at 300F.  1 hour should be enough time.
-Let the WFG run through the ignition process.
-Add the pan to the WFG and shut the lid.
-After 30 minutes, open the lid and stir the contents of the pan.
-Shut the lid and continue to smoke for another 30 minutes.
-Once done, stir the queso again.
-Remove pan from the grill, serve and enjoy!
