Welcome to Cooking with CJ! Inspiring you to get in the kitchen, or out on that grill and enjoy the feeling of making a home cooked meal!

My love of cooking, and eating, has inspired me to help teach everything I have learned over the years. I want to show every man and woman out there, that cooking is fun and easy to do! It's also like some in home therapy for me... When I'm cooking, nothing else bothers me, it's my stress relief. So please come along this journey with me as we build this channel together!

Get ready to indulge in the ultimate fall treat with our Delicious Pumpkin Cinnamon Roll Loaf recipe. This mouthwatering loaf combines the warmth of cinnamon with the richness of pumpkin, all wrapped up in a soft and fluffy dough. Perfect for a cozy morning or as a sweet snack, this Pumpkin Cinnamon Roll Loaf is sure to become a new favorite. 


What you'll need:
-! tube of cinnamon rolls.
-1 can of pumpkin.
-1 cup of heavy cream.
-2 eggs.
-1 tbsp cinnamon sugar mix.
-1 cup of white chocolate chips.

How to make it:
Chop up the cinnamon rolls into bite size pieces.
Mix the pumpkin, eggs, cinnamon sugar and cream.
Add the cinnamon roll pieces and chips to the pumpkin mix.
Pour the mix into a greased loaf pan.
Place in a 350F oven for 45-60 minutes. Or until cooked all the way through.
Remove from the oven, let it cool and slice.
Use the icing from the cinnamon rolls and drizzle over the slices. 
Enjoy!

CJ uses his @NinjaKitchenUS Foodi to make these amazing chicken Tinga tacos. They were awesome no matter how you pronounce it!

Normally, that’s a fair question 😂
But today we’re calling in backup.

Full recipe below + commentary from a very humble gringo trying not to mess with perfection 😂

What you’ll need:
-1 Tinga Bomb.
-3 lbs chicken boneless skinless chicken thighs.
-1 large white onion sliced thin.
-Corn Tortillas.
-Queso Fresca.
-Shredded lettuce.

How to make’em:
In your Ninja Foodi, place the chicken and Tinga Bomb, with a 1/2 cup of water.
Close and seal the Foodi and set for HI pressure for 15 minutes.
Release the pressure and add the onions.
Close and seal the lid and set for HI pressure for another 5 minutes.
Release the pressure and shred the chicken in the pot.
Fry up some tortillas in light oil until soft.
Add the chicken Tinga, top with lettuce, and queso Fresca.
Serve and enjoy!

These are the perfect mashed potatoes for your holiday dinners! Or your everyday dinners!

What you’ll need:
-4lbs Yukon Gold potatoes (peeled)
-2 cups heavy cream.
-4oz salted butter.
-Couple sprigs of thyme.
-Couple sprigs of rosemary.
-4 cloves of garlic (smashed)
-Salt and pepper to taste.

How to make it:
Quarter the potatoes.
Please the potatoes in salted water and bring to a boil. Boil the potatoes until fork tender.
In a pan, add the cream, herbs, garlic and some salt and pepper. Bring to a light simmer.
Once the potatoes are cooked, strain them off.
Push the potatoes through a ricer.
Strain the cream mix over the potatoes.
Gently fold and stir the potatoes until thoroughly combined.
Check for seasoning, you may want to add more salt or pepper.
Garnish with more butter and chives.
Enjoy!

What you’ll need:
-Pasta 
-1/2 cup grated Parmesan cheese.
-1/2 cup grated pecorino Romano cheese.
-2 egg yokes.
-1 tsp salt
-1/3 tbsp black pepper.
-1 tsp garlic powder.
-1 tbsp minced fresh rosemary.

How to make it:
Add pasta to boiling water and cook to al dente.
Mix the egg yokes, cheeses, garlic powder, rosemary, salt and pepper into a paste.
Add the mix to a warm pan.
Add the pasta to the pan and start to mix thoroughly. 
Slowly pour some of the pasta water over the pasta and stir vigorously. 
The pasta water will help the cheese mix become rich and creamy.
Serve the pasta with some crusty bread and enjoy!

What you’ll need:
-3 lbs ground beef.
-1 cup bread crumbs.
-2 eggs.
-2 tbsps all purpose seasoning.
-2 marrow or soup bones.
-1 tbsp hot sauce or ketchup.
-Little pieces of onion.

How to make them:
Mix the beef, bread crumbs, eggs and seasoning.
Form the meat into feet shapes using the bones as the leg bones.
Place the little onion pieces where the toes would be.
Add to a 275f smoker or oven until they hit 160f internal.
Remove and put hot sauce or ketchup around the leg bone.
Serve and enjoy!
