Ingredients:
-Baby back ribs, sliced individually.
-BBQ rub.
-BBQ sauce.
-Butter.
-Hot honey.

Prep:
-Season ribs with BBQ rub.
-Add ribs to the smoker and using the smoker setting set for 275F,smoke for 45 minutes.
-When ribs are done smoking and up to 165F, pull them and place them in a foil pan or tin foil.
-Cover the ribs with bbq sauce, honey, more bbq rub and honey.
-Cover with foil and place back in the WFG, and continue to cook for another 30 minutes, or until the ribs hit 205F.
-Remove ribs from the foil and place back on the WFG and cook for another 15 minutes to set the sauce. 
-Remove from WFG and enjoy!

Quesabirria tacos using @wildforkfoods beef shanks! Gave them all that good smoke, covered them with all the Birria goodies and shredded them up for taco perfection!

This is my entry to Wildforks #wildforkgrillmasters contest! So do me a favor, like, comment, share, all that good stuff! 

Other stuff I used to make these:
Cooker - @pitbarrelcooker 
West Coast Shake - @unclestevesshake 
Charcoal - @jealousdevilcharcoal
Wood - @bearmountainbbq 
Cast Iron - @lodgecastiron 
Knife - @ergochefknives 

What you’ll need to make’em:
For the birria:
-4-5 lbs of beef shanks.
-1-2 tbsp all purpose Mexican seasoning.
-1 onion chopped.
-2-3 guajillo and ancho chiles, seeds and stems removed.
-2 tomatoes chopped. 
-2 bulbs of garlic sliced in half.
-4 cups beef stock.
-1 tsp cinnamon.
-1 tsp oregano.
-1 tbsp salt.

For the tacos:
-Corn tortillas.
-Oxaca cheese shredded.
-Oil.

How to make’em:
Season the beef shanks with all purpose seasoning.
Set up your smoker to 275-300f.
Smoked the shanks until they hit 170f.
Add the shanks to a pot or deep pan with the tomatoes, onions, garlic, oregano, salt, cinnamon and beef stock.
Cover and place back on the smoker until they hit 205f and are probe tender.
Remove from the smoker, pulled the meat out and shredded it up.
Strain the braising liquid to make your consume.

To make the tacos:
Heat your cast iron pan or griddle and add a little oil.
Dip the tortillas in the consume, getting the fat from the consume on the tortillas.
Place the tortillas on the pan and add the birria and cheese.
Once the cheese starts to melt, fold the tacos up and continue to fry both sides.
Serve tacos with onions, cilantro and a cup of the consume.
Enjoy as many as you can!

What you’ll need:
-Pilsbury crescent rolls.
-Deli ham.
-Smoked gouda sliced cheese.
-5 eggs.
-1/2 tablespoon all purpose seasoning.
-1 tablespoon of butter.

How to make them:
-Whip the eggs with the seasoning.
-Add butter to a pan and add the eggs.
-Cook the eggs to form one flat scramble.
-Remove eggs and place on a cutting board.
-Slice the eggs, ham and cheese into small rectangles.
-Open crescent rolls and lay them out individually.
-On the fat side of the cressent roll, add the egg, ham and cheese.
-Roll the crescent roll up with the egg, ham and cheese.
-Place them on a cookie sheet.
-Throw them into a 375F oven for 10-13 minutes.
-Remove from the oven, let cool for a couple minutes and enjoy!

Pulled pork with so much bark it’ll bite ya!! We butterflied two pork shoulders for max surface area, got’em seasoned up with @blazingstarbbq  Pork’n rub, threw them on the best pellet smoker ever my @lonestargrillz and gave them all the smoke at 275f!

Got my @ThermoPro  TempSpikes in and took them to 170f internal, wrapped them up in apple juice and a bunch of that good @trybachans let them go until they hit 205-210 and were probe tender! Let them rest, then shredded them in those good juices! 

A little more Blazingstar and Banchans, we were good to go!

What you’ll need:
-Baguette of fresh bread.
-Package of thin cut bacon.
-Two Jalapeños minced.
-Tub of whipped cream cheese.
-1 cup of cooked bacon diced up.
-1 cup of shredded cheddar cheese.
-1 tbsp of sweet and spicy bbq rub. 

How to make it:
Slice your baguette into thin slices.
Mix the diced bacon, minced jalapeños, cheddar cheese and bbq rub with cream cheese.
Spread a tbsp of the cream cheese mix between two slices of the bread.
Wrap that sandwich with a slice of the bacon.
Sprinkle a little bbq rub on the bacon.
Using a pan or griddle, cook all sides of the sandwiches until the bacon is cooked all the way.
Serve them up and enjoy!
