Cooking With CJ

Welcome to Cooking with CJ! Inspiring you to get in the kitchen, or out on that grill and enjoy the feeling of making a home cooked meal!

My love of cooking, and eating, has inspired me to help teach everything I have learned over the years. I want to show every man and woman out there, that cooking is fun and easy to do! It's also like some in home therapy for me... When I'm cooking, nothing else bothers me, it's my stress relief. So please come along this journey with me as we build this channel together!

Slice 3 racks of baby back ribs into single ribs.
Coat the ribs in seasoning.
Smoke the ribs at 275f until they hit 170f.
Get ribs in a tray, add bbq sauce, honey, apple juice, stick of butter and more bbq seasoning.
Cover tray with foil and continue to cook for another 1-2 hours until ribs are 205f and tender.
Remove the cover, mix them up in the juices, add some more bbq sauce and cook uncovered for another 10-15 mins.
Remove from the smoker and enjoy!
This is the best way to do your prime rib roast! Gotta get it on a rotisserie!

I take my roast to 125f internal remove and let rest for 20-30 minutes. Then slice into it.

The butter baste is just butter, garlic chunks, olive oil and rub. I tied some rosemary together to make a basting brush. And baste it every 15-20 minutes or so.

I placed some potatoes under the roast with olive oil and seasoning.  It’s gonna catch all the beef drippings and the buster basting.

We’re leveling up this classic holiday treat! Making @oreo Christmas Crack! 

Shout out to Bre from @marriedtobbq for the cookie inspiration! 

What you’ll need:
-Oreo Thins cookies.
-1 stick of butter.
-1/2 cup brown sugar.
-1 tbsp @unclestevesshake Dessert Shake. (Or cinnamon sugar mix)
-1 cup chocolate chips.
-1/2 tsp flaky salt.
-Holiday sprinkles.

How to make’em:
Add Oreo’s to a foil lined cookie sheet.
Melt butter and mix in brown sugar and dessert shake.
Boil mix for a couple minutes, stirring the whole time.
Pour the mix over the Oreo’s and smooth it out evenly.
Place in the over at 350f for 5-10 minutes.
Remove and sprinkle the chocolate chips all pver.
Let it set in a warm oven for a couple minutes until the chocolate chips start to melt.
Smooth the chocolate out evenly all over.
Add the salt and sprinkles.
Throw it in to the fridge for an hour to cool off and set.
Cut into squares, serve and enjoy!

Learn how to make a delicious biscuits and gravy casserole with this easy-to-follow recipe. This classic Southern dish is perfect for breakfast, brunch, or dinner, and is sure to become a family favorite. The combination of flaky biscuits, savory sausage gravy, and creamy eggs is a match made in heaven.

This can be made the night before, and re-heated in the oven the next morning.  

What are you adding to this casserole?

What you'll need:
-2 cans homestyle biscuits.
-6 eggs scrambled.
-1 cup shredded smoked gouda cheese.
-1 lb breakfast sausage.
-2 cups whole milk.
-2 tbsps butter.
-1/4 cup AP flour.
-1 tbsp all purpose seasong. 

How to make it:
Gravy:
Cook sausage all the way through.
Add butter and seasoning.
Add the flour and cook through for a minute or so.
Pour in the milk, stir until thickened.

Casserole:
Cut the biscuits into 4ths.
Pour the gravy in a large baking dish.
Add the eggs over the gravy.
Spread the cheese over the top.
Place the biscuits on top. 
Heat your oven to 375F.
Bake the casserole for 25-30 minutes.
Remove from the oven and let cool for a few minutes.
Serve and enjoy!

Throw away that package ham glaze this year and try my homemade ham glaze! 

Season and smoke your ham at 325f until it hits 160f. Every half hour or so brush it down with this glaze.

In a pot over medium heat add these items.  Stir to combine and bring to a boil. Reduce the heat to a simmer and stir until it’s thickened.

Glaze:
-1/2 cup apricot preserves.
-1 tbsp @unclestevesshake Dessert Shake.
-1 oz bourbon.
-1 tbsp maraschino cherry juice.
-8 oz pineapple juice.
-1 tbsp hot honey.
-2 tbsp butter.

Turkeys aren’t just for Thanksgiving! Make a bird anytime!

This birdie was injected with @tonychacheres creole butter. And seasoned with Cajun Honey rub from @tfti.bbq and @tftibbq.shop.

I smoked this at 325 with my @zgrills until it hit 158-160f in the breast.  The resting carry over will take it to 165f.

This birdie was juicy as can be!
