Equipment
- Ninja Woodfire Grill
- Butcher twine
- Temperature probe
Ingredients
- 4 bone prime rib
- rosemary for flavor and presentation
- kosher salt for dry brining
- Wagyu beef tallow for added flavor and crust
- Uncle Steve's Lucky Shake barbecue rub for seasoning
Instructions
- Take the prime rib out of the package and slice off the bones completely, then tie the roast with butcher twine and snake rosemary underneath the twine.
- Cover the roast in kosher salt and place it in the fridge uncovered on a rack for at least overnight, ideally for two to three days.
- Take the roast out of the fridge and let it sit to take the chill off. Spray it with Wagyu beef tallow and coat it with Uncle Steve's Lucky Shake.
- Set the Ninja Woodfire Grill to the smoker setting at 275°F. Cook until the internal temperature reaches 125°F, about a couple of hours, checking periodically.
- Once the roast reaches 125°F, remove it from the grill, cover it with tin foil, and let it rest for about half an hour to allow the juices to reabsorb.
- After resting, remove the twine and rosemary, slice the roast, and serve.
