Equipment

  • Ninja Woodfire Grill
  • Butcher twine
  • Temperature probe

Ingredients

  • 4 bone prime rib
  • rosemary for flavor and presentation
  • kosher salt for dry brining
  • Wagyu beef tallow for added flavor and crust
  • Uncle Steve's Lucky Shake barbecue rub for seasoning

Instructions

  • Take the prime rib out of the package and slice off the bones completely, then tie the roast with butcher twine and snake rosemary underneath the twine.
  • Cover the roast in kosher salt and place it in the fridge uncovered on a rack for at least overnight, ideally for two to three days.
  • Take the roast out of the fridge and let it sit to take the chill off. Spray it with Wagyu beef tallow and coat it with Uncle Steve's Lucky Shake.
  • Set the Ninja Woodfire Grill to the smoker setting at 275°F. Cook until the internal temperature reaches 125°F, about a couple of hours, checking periodically.
  • Once the roast reaches 125°F, remove it from the grill, cover it with tin foil, and let it rest for about half an hour to allow the juices to reabsorb.
  • After resting, remove the twine and rosemary, slice the roast, and serve.

Notes

  • Cooking time will vary based on the thickness of the roast and exact grill conditions.
