Equipment

  • 9 by 13 baking dish
  • Mixer
  • Spatula
  • Pyrex cup

Ingredients

  • white cake mix
  • egg whites
  • oil
  • water
  • strawberry Jell-O about half of a family size package
  • cold water
  • cool whip
  • blue sprinkles
  • strawberry pop rocks

Instructions

  • Start with white cake mix, add egg whites, oil, and water according to the box directions. Mix on low to avoid mess, then increase to medium speed for 2 minutes.
  • Pour the batter into a slightly greased 9 by 13 baking dish and bake at 350°F for about 25 minutes or until a toothpick comes out clean.
  • Once the cake cools, poke holes in it using a spatula to prepare for the Jell-O.
  • Mix hot water with strawberry Jell-O until dissolved, then add cold water as instructed on the box.
  • Pour the Jell-O mixture into the holes in the cake, filling them adequately. Let the cake firm up in the fridge for at least 1 hour, preferably 2.
  • Spread cool whip evenly over the top of the cake after removing it from the fridge.
  • Top with blue sprinkles and strawberry pop rocks just before serving so they remain crunchy.

Notes

  • The cake should be cooled adequately before poking holes and adding the Jell-O.
  • Chill the cake with the Jell-O for 1 to 2 hours to allow it to firm up properly.
